Templates are built to fit every business, which means they fit the way yours actually runs only by accident. The booking flow is whatever the theme shipped with. The menu is a PDF because that was the easy option. The parts that decide whether someone books or leaves are the parts a template was never designed around.
Building it properly costs more at the start and less afterwards. There is no theme to fight when you need a second location, no plugin that breaks the checkout on an update, and no rebuild in eighteen months because the thing you needed was never possible on that foundation.
